From the wild, windswept slopes of Ermionis, our Heather honey is a true connoisseur’s choice. The bees work the tiny, bell-shaped heather flowers that cling to the poor, acidic soil, producing a honey with a remarkably thick, jelly-like consistency and an uncompromising, bittersweet depth that reflects the rugged landscape.
Tasting Notes:
Dark, mahogany-brown with a reddish glow. Intensely floral yet earthy, with pronounced woody notes, a hint of caramelized orange peel, and a persistent, pleasantly bitter aftertaste that lingers on the palate. It has a unique gelling texture (thixotropic).
Harvest Period:
Mid-August – Late September (late summer/early autumn, when heather blooms).
Perfect Pairings:
- With Tea: Excellent in Earl Grey or rooibos — its bitterness balances tannins beautifully.
- Savoury: Glaze game meats (venison, duck) or brush over blue cheese like Roquefort.
- Desserts: Pair with dark chocolate mousse or drizzle over poached pears for a sophisticated finish.
How to Decrystallise Honey
1. Hot Water
Use a pan or stainless steel pot. Place the closed jar of honey in the pot and fill it up with hot (not boiling!) water up to where the honey is in the jar. Wait until the water is cool. Subjecting honey to too much heat would destroy its live enzymes. Lift the jar out of the pan of water and stir. If there are still crystals in the honey, repeat the process. When the honey is liquid, use as you normally would.
2. In A Slow Cooker
Place open jars of honey in your slow cooker and leave on low for 8 hours or so. No water is necessary, you can do this dry. Leave the honey in the slow cooker for longer if there are still honey crystals present.
Don’t Microwave Crystallized Honey!
