Carob Honey : The Velvety, Chocolate-Like Delight

A rare gem from Ermionis, our Carob honey is produced by bees from the nectar of the ancient carob tree's flowers (Ceratonia siliqua), which thrive in the sun-baked soils of the eastern Peloponnese. The result is a dark, molasses-like honey with an utterly unique, malty character — often compared to cacao for its deep, chocolatey undertones. This is a honey that carries the memory of Mediterranean forests and centuries-old groves.

Tasting Notes:

Nearly black with warm chestnut highlights. Rich, smooth, and syrupy, with distinct notes of dark cocoa, roasted almonds, dried figs, and a subtle savory, soy-like umami finish. Low in acidity, with a dense, velvety texture that crystallizes very slowly, making it a luxurious drizzle for almost anything.

Health & Wellness:

Carob honey is a mineral powerhouse — exceptionally rich in calcium, magnesium, and potassium, supporting bone strength and cardiovascular health. Unlike many dark honeys, it has a naturally lower glycemic index, offering sustained, balanced energy without sharp sugar spikes. Its high phenolic content delivers potent antioxidant protection, while its natural prebiotic properties nurture a healthy gut. Traditionally, it has also been valued as a soothing remedy for digestive discomfort and mild respiratory issues.

Harvest Period:

Late Autumn – Early Winter (typically October to December, when the carob trees flower and this rare, late-season honey is collected).

  • Savoury: Use as a glaze for pork belly, mix into barbecue sauces, or whisk into vinaigrettes for earthy salads.

Crystallisation of honey is a natural phenomenon of pure, raw honey. Adulterated, processed or poor quality honey will not crystallise, so if it does be happy! The composition ratio of glucose and fructose in a floral nectar source determines how fast the honey crystallises. Some honey varietals like our Heather honey crystallise swiftly in a few weeks by forming a layer at the top, while other honey varietals crystallise slowly and stay liquid for a few years.

How to Decrystallise Honey

1) Hot Water

Use a pan or stainless steel pot. Place the closed jar of honey in the pot and fill it up with hot (not boiling!) water up to where the honey is in the jar. Wait until the water is cool. Subjecting honey to too much heat would destroy its live enzymes. Lift the jar out of the pan of water and stir. If there are still crystals in the honey, repeat the process. When the honey is liquid, use as you normally would.

2) In A Slow Cooker

Place open jars of honey in your slow cooker and leave on low for 8 hours or so. No water is necessary, you can do this dry. Leave the honey in the slow cooker for longer if there are still honey crystals present.
