Olive Oil vs Wine

 The ideology and process of olive oil making is actually in almost every aspect similar to wine making. You have different tree varieties that deliver different flavours, smells with varying intensity and acidity. The quality is dependent on a combination of factors: The climate of the area they grow, the altitude of the groves, the soil, the prevailing weather conditions (an entire season can be destroyed by droughts, ice or too heavy rain at the wrong time) and of course the farming approach of each producer (i.e. when you harvest, how you water them, how you prune them, if and how you clear the grass around them, etc etc).

 

The Extra Virgin Olive Oil, undergoes organoleptic/sensory testing and rigorous chemical analysis. There are even intentional competitions with panels experts judging and handing out awards.

 

The only (fundamental) difference between extra virgin olive oil and wine is time: Olive oil is best consumed fresh, wine gets better over time…
