Here's a question for you: when you buy a bottle of olive oil, do you know what's actually in it?

If it's from the supermarket, chances are the answer is "a little bit of everything." And I don't mean that in a good way.

Most commercial olive oils are blends — mixed from different olive varieties, often from different countries, all thrown together to hit a consistent taste profile year after year. It's reliable, sure. But it's also... boring.

Think of it like wine. A generic bottle that just says "red wine" could be anything. But a bottle that says "Pinot Noir" or "Cabernet Sauvignon"? That's a declaration. That's character. That's a grape with a story to tell.

Enter the single varietal

A single varietal olive oil comes from one type of olive. That's it. No mixing. No blending. Just pure, unadulterated expression of that one fruit.

And just like a great wine, it has something to say.

Take our Koroneiki, for example. This is the queen of Greek olives. She's small, she's mighty, and she produces oil that's intensely flavourful. Grassy. Peppery. With that beautiful throat burn that lets you know you're tasting something alive. It has a high level of polyphenols and delivers a robust fruity nose, with a touch of balancing bitterness and a strong, peppery finish. Typical flavours include grass and artichokes.

When you pour our Koroneiki, you're tasting the groves we've tended for generations. You're tasting the soil, the sun, the care we put into every tree. It's not a generic "olive oil" flavour — it's our flavour.

And then there's Manaki. This is a variety that ripens later — harvest begins from mid-November to early January. It's more delicate, more buttery, with a softer finish. Its strong aroma reminds of ripe fruits like apple, tomatoes and sometimes almonds. Extremely tasteful, it's the best choice for salads and has fanatic friends among our customers. Where Koroneiki punches, Manaki whispers. Put them side by side and you'll taste the difference immediately.

That's the beauty of single varietals. They're honest. They're expressive. And they remind you that olive oil isn't just a cooking ingredient — it's a craft.

But wait — we also make a blend

Now here's where I need to be careful, because after all that talk about single varietals being special... we also make a blend.

Our "Balanced" Extra Virgin Olive Oil is a blend of Koroneiki and Manaki. And I stand by it completely.

Here's why it's different from the supermarket blends I was just talking about.

When a big commercial producer blends oils, they're usually mixing from different countries, different harvests, different qualities — all to hit a cheap price point. They're not blending for flavour; they're blending for profit.
