Ingredients:

8 Medium Tomatoes - roughly chopped

2 Medium Bell Peppers - roughly sliced

2 Medium Red Onions - roughly chopped 

2 Chillies - deseeded and chopped 

Papa’s Grove Extra Virgin Olive Oil Robust

Balsamic Vinegar

Sea Salt

Vodka

Papa's Grove Organic Oregano (If relish is used as a sauce base)


Execution:


Place all chopped ingredients in a large roasting dish. Coat the ingredients with olive oil. Season well with sea salt and balsamic vinegar. Oven roast with fan at 180deg for 90 minutes or longer until all ingredients are reduced and caramelised. Stir ingredients every 30 minutes while roasting. 


Remove from oven when ready and douse the hot roasted ingredients with vodka for added flavour and to deglaze the roasting dish. Transfer all into air tight container to cool. Allow to sit before serving or keep in refrigerator overnight for flavours to meld. 


Add more Papa’s Grove extra virgin olive oil before serving slightly chilled or at room temperature. Enjoy as a plant based relish or condiment. Spread on bread or cracker.

When using as a sauce base for pasta, add Papa's Grove Organic Oregano and warm up the relish.
