I never thought much about lamp chops until I had THE most amazing lamp chops grilled to perfection, complete with crispy fat in a tiny romantic tarverna during winter in Metsovo, Northern Greece. It wasn’t a fancy restaurant, but the smells that was emitting from the kitchen was heavenly and the food was to die for. (Actually that goes without saying with most of the Greek dishes I have ever had!)

Now I simply just love my lamb chops (αρνίσιο κρέας or arnísio kréas)! I love kreas! And belive it or not, you can even cook it in your own home. They don't need much effort (or time) to be honest, when you cook them at home. All you really need to make them a weekend favourite with the family is some amazing olive oil, lemon, rosemary, frangrant oregano and garlic, and of course lamb chops! Really that’s it! Once you perfect them, there really is no going back!


INGREDIENTS:

Lamp chops

Extra Virgin Olive Oil

Lemon

Oregano

Rosemary

Salt & Pepper


Combine all the ingredients into a marinade and bath your lamp chops in it.  Let them sit in them for a bit – of course the longer they rest in them, the better. Heat up the pan and and cook the lamp chops for about 3-4 mins on both sides, depending on thickness until done to your liking. We like ours medium rare - medium. They would look nice and golden brown on the outside, and still pinkish on the inside, tender and juicy. Of course if you want them more done, you can leave them to sear on each side 1-2 mins longer. Now comes the best part. Stand the lamp chops on the fat side and let them burn on the pan. The fat will render and start to crisp up nicely. 

Once cooked, remove them from the pan / grill. Sprinkle more oregano, some salt and pepper to taste. Serve them with some homemade garlicky tzatziki or pesto dip even, toasted pita bread and a side of Greek salad to finish off the perfect weekend meal! This is a guaranteed win for the family.
